ブレス鶏で有名なブールカンブレスから東へジュネーヴを回り込んでいくと現れる山あいの村 Lucinges(リュサンジュ)。ヴォワロン山の中腹斜面、澄んだ空気の中に位置するブラッスリー。
エビアンの採水地にもほど近く、アルプスを眺めるこの地は、シャモニー=モンブランに降る雨や雪が地層によって歳月をかけ濾過された名水に恵まれる。最高の空気、水、有機栽培のモルト、ホップ、知り合いから分けてもらった果実やハー ブ、ワイン樽。この素材を個性と風味あふれるビールに仕上げるのがクリストフ。
見た目オャレで気のいい兄貴ですが、パリ トトゥールダルジャンでソムリエを務め、料理人に転向してからもパリ、ロンドン、ジュネーヴの2つ星を中心にキャリアを積んできた実力派。
ポワチエのワイナリーに生まれ、バレエ、ダンスの道を歩んできたバーバラと共にレストランを開いたのが2003年。旬のマルシェのメニューと思いっきりナチュラルなワイン、情熱と貪欲さ。食材、ワインの造り手ともさらに親交を深めていく。
その9年後、彼らの道は友人の誘いからビール造りにつながることに。
彼らのオープンで前向きなキャラクター、そしてクリストフのソムリエ＆料理人のセンスが生かされたビールは彼らが愛するワインのように心にしみこんでいきます。
